SH: I can't speak about the headphones specifically, but I own a pair of Bluetake's iPhono mini's (which are like these, stereo bluetooth headphones & headset), and I can say that they definately do dual-mode mono for phones that don't have the A2DP profile. Also, another great thing these headphones do is being dual-paired to both your phone and computer so you can listen to tunes, and switch over to phone when a call comes in.
The iPhono mini's , are in my opinion the best bluetooth device I've ever owned and they can be had for about $50 cheaper if you really need that iPod adapter, or $100 cheaper if you just want the headphones themselves. I highly recommend these bad boys =).
